Slow Cooker Sunday: Butternut Squash Soup

Slow Cooker Sunday is back! Granted I will put the disclaimer in that I may not be posting every Sunday though. Thankfully I am covered for the next few Sunday’s as I have two recipes in my blog queue that I never posted. It’s a good thing recipes don’t expire! LOL! So, in honor of my first Slow Cooker Sunday post in a quite a few months and since its Fall I bring you a Butternut Squash Soup that’s super easy, super quick and super delicious!

Truthfully this soup couldn’t get any easier… I placed all the ingredients – butternut squash, chicken broth, coconut milk, chopped onion, brown sugar, soy sauce and crushed red pepper – in my slow cooker…

And set it cook on low for 4 hours. Granted the before cooking and after cooking are pretty much the same, but, trust me this was 4 hours later.

I then transferred the soup to a pot and used an immersion blender to blend all the ingredients together until it was smooth. And then finally I stirred in lime juice, which really took the flavor of the soup up another notch. Citrus really does have a way of bringing out and bringing together different flavors. And that was it!

Butternut Squash Soup

Ingredients:

2 pounds butternut squash, peeled, seeded and cut into 1-inch pieces

2 cups chicken broth

1 14-ounce can unsweetened coconut milk

1/2 cup finely chopped yellow onion

1 tablespoon light brown sugar

1 tablespoon soy sauce

1/2 teaspoon crushed red pepper

2 tablespoon lime juice

Directions:

In a 3 1/2 to 4 quart slow cooker, combine all ingredients except for the lime juice.

Cover and cook on low-heat setting for 4 to 5 hours or on high-heat setting for 2 to 21/2 hours.

Use an immersion blender, food processor or blender to blend soup until smooth. Stir in lime juice and enjoy.

Slow Cooker Sunday: Mushroom & Spinach Lasagna

I love lasagna; I just don’t like all the work that goes into it. It can be time consuming and making sure the noodles don’t tear while boiling them always deters me from making it. But those road blocks are gone since I found a winning recipe to make in my slow cooker.

To begin, over medium-high heat I sautéed mushrooms in olive oil for a few minutes and then added in baby spinach and continued sautéing until the mushrooms were tender and the spinach had wilted.

Next I added in diced tomatoes, tomato sauce, Italian seasoning and salt. Once the mixture began to boil I lowered the heat and let it simmer for a few minutes.

Meanwhile I combined ricotta cheese, shredded parmesan cheese and pepper in a small bowl.

After spraying the inside of my slow cooker with cooking spray I spread 3/4 cup of the sauce into the bottom of it. I then layered 3 lasagna noodles over the sauce…

And topped it with another 3/4 cups of the sauce, the ricotta cheese mixture and 1 cup of shredded mozzarella cheese.

I then topped the cheese with another 3/4 cup of the sauce and the remaining 3 lasagna noodles and finally the remaining sauce.

After covering it and cooking it on low for 5 hours I topped it with the remaining mozzarella and parmesan cheeses, covered it once again and let it stand for an additional 5 minutes until the cheeses had melted.

And while it was delicious, unfortunately it didn’t stay together when I tried to cut it out of the slow cooker. Oh well! Taste wins over plating sometimes!

Slow Cooker Mushroom Spinach Lasagna

Ingredients:

No Stick Cooking Spray

1 tablespoon olive oil

1 8oz. package fresh sliced mushrooms

1 6oz. package baby spinach leaves

1 14.5 oz. can diced tomatoes with basil, garlic and oregano, undrained

2 cups tomato sauce

1/2 teaspoon dried Italian seasoning

1/4 teaspoon salt

1 cup ricotta cheese

1/2 cup grated parmesan cheese, divided

1/4 teaspoon ground black pepper

6 dry lasagna noodles, uncooked

1 1/2 cups shredded mozzarella cheese, divided

 

Directions:

Spray the inside of a 4-quart slow cooker with the cooking spray. Heat oil in a large skillet over medium-high heat. Add the mushrooms and cook for 3 minutes, stirring occasionally. Add in the spinach cook a few more minutes, until the mushrooms are tender and the spinach has wilted, stirring occasionally. Stir in the undrained tomatoes, tomato sauce, Italian seasoning and salt. Bring to a boil then reduce the heat and simmer for 3 minutes.

Combine the ricotta, 1/4 cup parmesan cheese and pepper in a small bowl and set aside.

Spread 3/4 cup of the sauce on the bottom of the slow cooker. Layer 3 lasagna shells over it, breaking the shells to hit. Top with 3/4 cup of sauce, ricotta cheese mixture and 1 cup of mozzarella cheese. Top with an additional 3/4 cup of sauce and remaining 3 lasagna noodles. Spoon the remaining sauce over the noodles.

Cover and cook on low for 5 hours, or until noodles are tender. Sprinkle with remaining parmesan and mozzarella cheeses, cover and let stand for 5 minutes or until the cheeses have melted.

Slow Cooker Sunday: Moroccan Spiced Butternut Squash and Beef Stew

For this week’s Slow Cooker Sunday meal I’m bringing you a dish with flavors from North Africa, specifically Morocco. Spices are used extensively in Moroccan food… Hence bringing together a multitude of wonderful flavors. So, it’s no surprise that this week’s Moroccan Spiced Butternut Squash and Beef Stew is full of flavor.

To begin I placed 2lbs. of cubed beef chuck in the bottom of my slow cooker.

After mixing together ground ginger, turmeric, paprika, cinnamon, salt and pepper in a small bowl, I sprinkled it over the beef and tossed it to coat the meat.

Next I added in a small diced onion and a can of peeled whole tomatoes (with the liquid) and crushed the tomatoes with my hands.

And finally I put butternut squash chunks on top of everything and sprinkled salt over it and added water. If you cannot find fresh butternut squash use frozen instead.

I cooked it on low for 7 hours and the aroma was amazing when I uncovered it.

I served it over white rice and while it was delicious the first day it was even more so the following day as the flavors continued to develop.

Slow Cooker Moroccan Spiced Butternut Squash and Beef Stew

Ingredients:

2 teaspoons ground ginger

2 teaspoons ground turmeric

1 1/2 teaspoons sweet paprika

1/4 teaspoon ground cinnamon

1 tablespoon and 1 teaspoon Kosher salt, divided

1 teaspoon black pepper

2 pounds beef chuck, cut into 1 1/2 inch cubes

1 small onion, diced

1 28oz. can peeled whole tomatoes (with liquid)

1 butternut squash (about 2lbs.) peeled and cut unto 1 1/2 cubes

 

Directions:

Place the beef in the slow cooker.

In a small bowl mix together the ginger, turmeric, paprika, cinnamon, 1 tablespoon salt, and black pepper. Sprinkle over the beef and toss to coat well.

Add the onion and tomatoes with their liquid and crush the tomatoes with your hand.

Place the butternut squash chunks on top and sprinkle with remaining teaspoon of salt and 1 1/2 cups water.

Cover and cook on low for about 7 hours, until the beef is tender. Serve over rice.

Slow Cooker Sunday: Chicken Parmesan

Normally when I make Chicken Parmesan it’s because I have leftover breaded cutlets from the night before. I don’t know why, but, it just never crosses my mind to make Chicken Parmesan the same day I am frying up the breaded cutlets. Maybe it’s so I can have something different the following night… leftovers are good but they are even better when you can spruce them up into something different. For today’s Slow Cooker Sunday I am bringing you Chicken Parmesan that’s lacking the breading but definitely healthier without it and also because there’s no frying involved and you get some veggies in the mix – mushrooms and onions.

To begin I placed the mushrooms and onions in the bottom of my slow cooker.

Next, I placed chicken breasts that I lightly browned on both sides over the vegetables.

Following that I poured a jar of pasta sauce over the chicken. You can use your favorite pasta sauce; I used my favorite Francesco Rinaldi Three Cheese Sauce. I then sprinkled dried basil and oregano over it and placed a bay leaf in as well.

After cooking it on low for about 7 hours I removed the cover and sprinkled it with parmesan and mozzarella cheeses and left it uncovered for about 15 minutes, until the cheeses were melted.

Meanwhile I cooked spaghetti which I served with the chicken.

Overall this was a nice alternative to the traditional chicken parmesan and definitely one that I will make again.

 

Chicken Parmesan

Ingredients:

8 ounces mushrooms, sliced

1 medium yellow onion, cut into thin wedges

1 tablespoon olive oil

3 to 4 boneless skinless chicken breasts

1 jar (24 – 26 oz.) pasta sauce

1/2 teaspoon dried basil

1/4 teaspoon dried oregano

1 bay leaf

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

Hot cooked spaghetti

 

Directions:

Place the mushrooms and cuts onions in the bottom of a 3 1/2 to 4 quart slow cooker.

Heat oil in a large skillet over medium-high heat and lightly brown the chicken on both sides. Place the chicken on top of the mushrooms and onions. Pour the pasta over the chicken, add the bay leaf and sprinkle the basil and oregano over the sauce. Cover and cook on low 6 to 7 hours or on high 3 to 4 hours.

Uncover, remove the bay leaf and sprinkle with the cheeses and leave uncovered on low for an additional 15 to 30 minutes, until the cheeses have melted. Serve over spaghetti.

Slow Cooker Sunday: Chicken and Hominy Stew

Hey Everyone! For this week’s Slow Cooker Sunday I am bringing you a stew that those of you who are sensitive to spiciness may find too spicy and those of you on the other end of the spectrum will say “Where’s the spice?” I’m on the latter side of that statement. I truthfully didn’t think the stew had any kick to it but others who tried it did, but, not so much that they weren’t able to enjoy it. So, what is this stew? Well, it’s a Chicken and Hominy Stew.

Once again, this is another of my favorite types of slow cooker meals… Just chop, drain then add to the slow cooker and let the machine work its magic. After cutting boneless skinless chicken thighs into approximately 1-inch pieces I placed them in the bottom of my slow cooker. Next I added in 2 seeded and chopped poblano chile peppers, half a bunch of cilantro that I roughly chopped and two cans of hominy that I rinsed and drained. I then added in my liquids… low-sodium chicken broth and a jar of mild salsa verde.

And finally I added in two corn tortillas that I tore into small pieces. I then covered it and set it to cook on low for 7 hours. Now, if you have a programmable slow cooker you need not worry about your start time, but, if you have a slow cooker like mine – I have one that has a 4 and 6 hour cook setting for high and a 8 and 10 hour cook setting for low, and a separate warm setting – make sure you take note of your start time. You don’t want to “overcook” the soup and end up with chicken that’s on the verge of shredding. You want a bit of bite to this soup since it is a stew.

And after 7 hours it was time to enjoy a bowl. I topped it with some chopped avocado and enjoyed it with an extra corn tortilla on the side. Overall there’s not one thing about this stew I would change. The flavors all worked well together and like I said earlier I definitely didn’t feel like it was too spicy, it was just right!

Slow Cooker Chicken and Hominy Stew

Ingredients:

1 1/2 pounds boneless skinless chicken thighs, cut into 1-inch pieces

2 15-ounce cans hominy, drained and rinsed

2 poblano chile peppers, seeded and chopped

1/2 bunch fresh cilantro, roughly chopped

2 cups low-sodium chicken broth

1 16-ounce jar salsa verde

1/2 teaspoon kosher salt

2 6-inch corn tortilla

Kosher salt

Options for topping:

sour cream

avocado, diced

cilantro, chopped

romaine lettuce heart, shredded

corn tortillas, warmed

Directions:

Add the chicken, hominy, peppers and cilantro to the slow cooker. Add the broth, salsa verde and salt and stir to combine. Next, tear the 2 corn tortillas into small pieces and add to the slow cooker. Give everything a good stir, cover and cook on low for 7 hours.

If serving with the tortillas, warm them according to the package directions. Top each serving of the stew with your favorite topping and enjoy. Serve with the warmed tortillas on the side.

*Please note I use a 5 1/2-quart slow cooker.

Slow Cooker Sunday: Chili

There are so many types of chili’s… Southwestern, White Bean, Three Bean, Vegetarian, Turkey, Chicken…. etc, etc, etc. Either way you make it the end result is pretty much the same… It’s delicious! For today’s Slow Cooker Sunday series I’m bringing you a classic chili, well, classic in my book. You know, ground beef, red kidney beans, some onions, cumin, garlic and so forth.

To begin, I sautéed 2 chopped onions and 1 chopped pepper in oil until they were softened.

Once they were softened I added in chopped garlic, chili powder and cumin.

And finally I added in ground beef along with salt. I broke the meat up with a wooden spoon and cooked it until it was no longer pink.

Next, I added the meat into the slow cooker along with diced tomatoes, tomato sauce and kidney beans. After stirring everything to combine it I covered it and cooked it on low for 8 hours.

And after those 8 hours once the chili thickened and all the flavors blended together I stirred in some chopped green chilies.

To serve it, I topped it with shredded cheddar cheese and a piece of cornbread that I made with a quick and easy mix from Jiffy.

What’s best about this chili is the leftovers… It tasted even better the following day!

Easy Slow Cooker Chili

Ingredients:

3 tablespoons vegetable oil

2 medium yellow onions, medium dice

1 red bell pepper, medium dice

6 medium garlic cloves, finely chopped

1/4 cup chili powder*

1 tablespoon ground cumin

2 pounds lean ground beef**

1 1/2 teaspoons kosher salt

1 (28-ounce) can diced tomatoes***

1 (14-ounce) can tomato sauce***

2 (15-ounce) can red kidney beans, drained and rinsed

1 (4.5-ounce) can chopped green chilies

Directions:

Heat the oil in a large sauté pan over medium heat until shimmering. Add the onions and bell pepper, season with salt and cook until the vegetables are tender, stirring occasionally, about 8 minutes.

Add the garlic, chili powder, and cumin. Stirring to coat the vegetables and cook until fragrant, about 1 minute. Add the ground beef and the measured salt, breaking the meat into small pieces with a wooden spoon. Cook until the meat is no longer pink.

Transfer the mixture to the slow cooker, add the diced tomatoes and their juices, tomato sauce and beans, stir well to combine. Cover and cook about 8 hours on low or 6 hours on high.

Stir in the chopped green chilies. Season with addition salt if needed and serve with your favorite toppings.

*Yes, it sounds like a lot but don’t worry the meat absorbs it and it will not be overpowering

** I used 80% lean  / 20% fat

*** For the diced tomatoes I used two 14.5-ounce cans of diced tomatoes and for the tomato sauce I used two 8-ounce cans of no-salt added tomato sauce.

****Please note I use a 5 1/2 quart slow-cooker.

Slow Cooker Sunday: Pumpkin Bread Pudding

This week for Slow Cooker Sunday I am bringing you something different… Dessert. Most people don’t think of making dessert in their slow cooker. I know I usually don’t. I tried making brownies once and it was a complete mess. Thankfully I had lined the insert of my slow cooker with aluminum foil so the clean-up wasn’t that bad. Thankfully this week’s Pumpkin Bread Pudding wasn’t a total mess and gave me hope that dessert is possible in a slow cooker. With Thanksgiving coming up this week this may be a good alternative to the customary pumpkin pie or a good addition to your dessert table.

First though let me introduce you to the newest addition to my kitchen… A smaller slow cooker. The slow cooker I normally use is  5 1/2 – quart and while it is a great size, I have a wonderful slow cooker cookbook with amazing recipes that call for a smaller one. Hence this 4 – quart one.

Now back to the recipe… To begin I cubed a small French baguette and set it aside.

Then in a large mixing bowl I combined eggs, granulated and brown sugar, cinnamon and ginger and beat them until smooth.

To that mixture I added pumpkin, milk, evaporated milk and vanilla extract and beat it until it was well blended.

Before adding anything to the slow cooker I generously greased it with butter.

Once I had done that, I placed half of the bread in the bottom of the slow cooker and drizzled it with 2 tablespoons of melted better. Next I poured half of the pumpkin mixture over it and topped it with 1/2 cup of chopped pecans. I repeated the layers…

Then covered the slow cooker and set it to cook on high for 2 hours.

After some careful inverting I transferred the bread pudding to a platter. Now, you could just serve it from the slow cooker – especially if you are serving it to a large crowd – but, if you choose to transfer it don’t make the same mistake I did. Let it cool for a few minutes before trying to flip it. I did it a little too soon after it was done and part of it fell apart. I will say that this definitely doesn’t look like your traditional bread pudding; it sort of reminded me of Monkey Pull Apart Bread. Regardless it was tasty although it didn’t have a strong pumpkin flavor. So it would be ideal for those who like pumpkin but don’t love it!

Pumpkin Bread Pudding

Ingredients:

3 eggs

1/2 cup sugar

1/2 cup light brown sugar

1 teaspoon cinnamon

1/2 teaspoon ginger

1 cup canned pumpkin

1 cup milk

1 (14-ounce) can evaporated milk

2 teaspoons vanilla extract

2 tablespoons butter, melted, plus more for greasing slow cooker

1 small French baguette, cubed

1 cup chopped pecans

Directions:

In a medium bowl combine the eggs, sugars, cinnamon and ginger and mix well with a hand mixer. Add the pumpkin, milks and vanilla and continue beating until blended.

Generously butter the slow cooker insert and cover the bottom with half of the cubed bread and drizzle with melted butter. Pour half of the pumpkin mixture over it and top with half of the pecans. Repeat the layers.

Cover the slow cooker and cook on high for 2 hours until set and puffed. Best served warm.

Slow Cooker Sunday: Shepherd’s Pie

This week for Slow Cooker Sunday I am bringing you Shepherd’s Pie. Customarily Shepherd’s Pie (or as it can also be called Cottage Pie) is a meat pie with a crust of mashed potatoes. Traditionally it was made with leftover roast meat but is commonly made today with ground meat, beef or lamb. This Shepherd’s Pie is made with beef chuck that is slow-cooked with vegetables in a beef broth and served over mashed potatoes. A twist on the traditional, but, just as delicious. And can I just say that this is my favorite type of slow cooker meal… Just place all of the ingredients into the slow cooker, turn it on and let the machine do the work.

First I placed beef, carrots and an onion into the slow cooker…

Next I added in beef broth, Worcestershire sauce and tomato paste. After giving the mixture a few goof stirs I then nestled two potatoes – one of the potatoes was the size of two – right on top and covered it and set it cook on low for 8 hours.

After the 8 hours I stirred in 2 cups of frozen peas and left it on the warm setting until the peas were heated through.

Meanwhile I removed the potatoes and mashed them with milk, butter, salt and pepper. If you are wondering why the color is a bit off, don’t forget that the potatoes absorbed some of the beef broth during the cooking, which only added to their flavor.

To serve, I scooped some of the mash potatoes in to a bowl and topped them with the stew… It was DELICIOUS!!!

Slow Cooker Shepherd's Pie

Ingredients:

1 1/2 pounds beef chuck, trimmed and cut into 2-inch pieces

1 large carrots, chopped

1 large onion, chopped

2 cups low-sodium beef broth

3 tablespoons Worcestershire sauce

2 tablespoons tomato paste

2 tablespoons all-purpose flour

2 large russet potatoes, peeled

2 cups frozen peas

1/2 cup milk, warmed

2 tablespoons unsalted butter

kosher salt

black pepper

Directions:

Place the beef, carrots and onions in the slow cooker. Add in the broth, Worcestershire sauce, tomato paste, flour 1 1/2 teaspoon salt and 1 teaspoon pepper and stir to mix well. Nestle the potatoes in the liquid.

Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours – until the potatoes are tender. Transfer the potatoes to a medium bowl and add the peas to the stew. Stir and cover and allow the peas to warm, 2 to 3 minutes.

Mash the potatoes with the warmed milk along with butter and 1/2 teaspoon each salt and pepper.

Serve the mashed potatoes topped with the stew.

Slow Cooker Sunday: Chicken Tikka Masala

Welcome to my new (and first) series… Slow Cooker Sunday. As the temperatures drop and the craziness of the holidays approach you may want something hearty and stress-free for dinner and the perfect solution to that is a slow-cooker dinner. You put all of your ingredients into the cooker in the morning, set it to cook on a high or low setting depending on your time needs and by the time you are ready to sit down to dinner your meal is ready and clean-up is a breeze. It can’t get better than that. A slow-cooker meal is also perfect for during the week, whether you are working, running errands or taking care of kids. That dreaded question that may run through your mind throughout the day – “what should I make for dinner?” – can easily be answered. So be sure to check back every Sunday to see what new meal I post. For today’s first Slow Cooker Sunday meal I am bringing you Chicken Tikka Masala. This is something I always order whenever I go out to an Indian restaurant. I am always tempted to order something different but I always settle on this favorite.

I began by cutting about a pound and a half of boneless skinless chicken thighs into bite-sized pieces and marinating them in yogurt for a few hours. Afterwards I placed them in the bottom of my slow cooker. In case you are wondering, marinating the chicken in yogurt helps to tenderize the chicken.

Next, in a sauté pan I cooked a diced onion and three minced garlic cloves in olive oil until the onion was softened. I then stirred in fresh grated ginger, tomato paste, garam masala, paprika and Kosher salt. Garam masala is what gives this dish its incredible flavor. Typically it’s a blend of black and white peppercorns, cloves, cinnamon, nutmeg, mace, black and green cardamom, bay leaf and cumin. Initially I looked for it in the international aisle of my supermarket and with no luck there I checked out the spice area and was able to find it among the McCormick Gourmet spices. I should have known it would be among the “fancy” spices in the glass bottles… LOL!

I then added the onion mixture to the chicken in the slow cooker along with a can of diced tomatoes. After stirring everything together I covered it and cooked it on high for 4 hours. I typically like to use my slow cooker on the low setting, but, I needed this dish to be done in the early afternoon.

Fifteen minutes before the end of cooking I stirred in heavy cream and left the cover off of the slow cooker so the sauce could thicken. Meanwhile I made basmati rice…

Which I served on the side with some of the chicken. This was INCREDIBLY delicious and just as good as the Chicken Tikka Masala I’ve had at some of my favorite Indian restaurants. I can’t wait to make it again.

Slow Cooker Chicken Tikka Masala

Ingredients:

1 to 1 1/2 pounds boneless, skinless chicken thighs, cut into bit-sized pieces

1/2 cup plain Greek yogurt

1 large onion, diced

3 garlic cloves, minced

1-inch piece whole ginger, peeled and grated

2 tablespoons tomato paste

2 tablespoons garam masala

2 teaspoons paprika

2 teaspoons kosher salt

1 (28-ounce) can diced tomatoes

3/4 cup heavy cream

2 cups cooked basmati rice, to serve

Directions:

Marinate the chicken in the yogurt for up to six hours or as little as an hour. Shake to remove the excess yogurt and place in the bottom of the slow cooker.

Sauté the onions and garlic in a little olive oil over medium-high heat until the onions have softened. Stir in the ginger, tomato paste, garam masala, paprika and salt. Transfer to the slow cooker on top of the kitchen. Add in the diced tomatoes. Stir to combine everything.

Cover the slow cooker and cook on high for 4 hours or on low for 8 hours. Make note of the start time because 15 minutes before the end of cooking add in the heavy cream. If you would like a thicker sauce leave the cover off for these final 15 minutes. Serve over rice.

*Please note I use a 5 1/2 quart slow-cooker.

A Slow Cooker Hit And Half Miss

The cold days of winter call for warm and hearty soups (or stews) to help keep you feeling warm and toasty to beat the winter chill. In a recent issue of Rachael Ray Magazine I came across one such soup that had the added bonus of being made in a slow cooker. A kitchen item I do enjoy using but don’t use often enough.

This stew – a Sausage, Bean & Spinach Stew  – was a cinch to make and was ready in about four hours. I began by adding white beans, chopped onions, carrots & celery, garlic, bay leaves and chicken broth to my slow cooker and cooking it on high heat for three and a half hours. I then added sausage meatballs and let them cook in the soup for about twenty-five minutes. Finally, I added in the spinach for the final ten minutes.

Final verdict… The stew was delicious. I’ll definitely be it making again. But, I think next time I’ll cook the meatballs a little before adding them to the soup.

Since I had my slow cooker out from obscurity I figured I would finally try making a dessert in it – a Triple Chocolate Brownie recipe I came across from Martha Stewart.

To begin I whisked together my dry ingredients: flour, unsweetened cocoa powder, baking powder and salt.

To get started on my wet ingredients I melted butter and bittersweet chocolate together.

After giving it a few good stirs I added in sugar and eggs.

I then folded it into the dry mixture along with walnuts and semi-sweet chocolate chips.

I then poured it into my slow cooker, which I sprayed with cooking spray and lined the bottom of with parchment paper.

I cooked it on low for four hours, the final half hour uncovered.

After letting it cool in the insert for two hours I flipped out the brownies to sadly discover that the edges were quite burnt and definitely not edible.

All was not lost though… After some clever cutting I was left with six, albeit irregularly shaped, brownies that were quite tasty and definitely not lacking in chocolate flavor.

Baking in a slow cooker… definitely not my first choice for delicious desserts, but, I wouldn’t rule out trying it again, just not brownies though!

Sausage, Bean & Spinach Stew

Ingredients

1 pound dried large white beans, such as great northern, rinsed and picked through

8 cups low-sodium chicken broth

1 onion, peeled and finely chopped

2 carrots, peeled and finely chopped

2 ribs celery, finely chopped

6 cloves garlic, finely chopped

8 sprigs fresh thyme*

1 bay leaf**

Parmesan rind (optional)*

1 pound sweet or spicy Italian sausage, casings removed, shaped into 1/2-inch meatballs

1 bunch spinach, trimmed

Juice of 1/2 lemon*

Crusty bread, for serving

Directions

In a large slow cooker, stir together the beans, chicken broth, onion, carrots, celery, garlic, thyme, bay leaf and Parmesan rind, if using. Cover and cook on high heat until the beans are nearly tender, about 3 1/2 hours.

Place the sausage meatballs on top of the beans. Cover; cook until the meatballs are no longer pink in the center, about 25 minutes.

Discard the thyme sprigs, bay leaf and Parmesan rind. Stir in the spinach, then cover and let stand until the spinach wilts, 10 minutes.

Stir in the lemon juice; season. Serve with crusty bread.

*I omitted these ingredients when I made my soup

Slow-Cooker Triple Chocolate Brownies

Ingredients

Nonstick cooking spray

1 1/4 cups all-purpose flour (spooned and leveled)

1/4 cup unsweetened cocoa powder

3/4 teaspoon baking powder

1/2 teaspoon coarse salt

1/2 cup (1 stick) unsalted butter, cut into pieces

8 ounces bittersweet chocolate, chopped

1 cup sugar

3 large eggs, lightly beaten

1 cup walnut halves, coarsely chopped

1 cup semisweet chocolate chips (6 ounces)

Directions

Lightly coat a 5-quart slow-cooker insert with cooking spray. Line bottom with parchment paper and lightly coat with spray. In a small bowl, whisk together flour, cocoa, baking powder, and salt.

Place butter and chocolate in a medium microwave-safe bowl and microwave in 30-second increments, stirring after each, until chocolate is melted. Add sugar; stir to combine. Stir in eggs. Add flour mixture, walnuts, and chocolate chips and stir just until moistened (do not overmix). Transfer to slow cooker and smooth top.

Cover and cook on low, 3 1/2 hours. Uncover and cook 30 minutes. Remove insert from slow cooker and run a knife around edge to loosen brownies. Let cool completely in insert on a wire rack, about 2 hours. Turn out onto a work surface and cut into 14 brownies.
